Low Carb Cheddar Jalapeno Biscuits

These were very very good!

They are made with Coconut flour and have less than 2 carbs each!

Ingredients:
1/4 cup coconut oil
4 eggs
2/3 cup coconut flour
1/4 tsp baking powder
1/2 tsp onion powder – more if desired
1/4 tsp salt – more if desired
1/2 cup shredded sharp cheddar cheese
1/4 cup diced jalapenos

Mix Coconut oil and eggs in bowl, you might have to microwave the coconut oil a bit to soften it. You don’t want it to be liquid, but you do want soft small chunks.

Then fold in the cheese and jalapenos.

Mix the dry ingredients in a separate bowl….and then fold in the wet ingredients.

Liberally grease a mini muffin pan or cookie sheet.

Spoon in muffin pan or spoon blobs onto cookie sheet; makes 9 muffins.

Cook at 400 F for 20 minutes.

run a sharp knife around edge and remove from pan.
